Cheesy Alfredo Tortellini

I've made the decision to no longer post on my food blog, Katie's Korner. I plan on keeping it active for everyone to have access to past recipes however, moving forward I'll be posting any new recipes on this blog in order to simplify my life and keep everything organized.

I do have a new one to share with everyone. It was fast and simple and most importantly, it's delicious.

Cheesy Alfredo Tortellini
Serves 4

14.5 oz. can Diced Tomatoes with Basil, Garlic, and Oregano
15 oz. jar Alfredo Sauce
20 oz. package of Cheese Tortellini

1.) In a large pot, fill 1/2 full with water and bring water to a boil.

2.) In a medium saucepan combine alfredo sauce and diced tomatoes and simmer.

3.) Generously salt boiling water and cook packaged tortellini in pot of boiling water. Once tortellini's plump and float to the surface immediately drain them.

4.) Add half of your sauce to cooked tortellini and lightly toss to coat each tortellini.

5.) Serve immediately and offer extra sauce for those who wish to have a saucier tortellini.

This makes a great weeknight meal for all of you moms and dads with children who have busy weeknight schedules.
